Is it possible to place certain pages/subfolders/categories under subdomains and still have them work properly?

What I want is for example:

website.com/forum/  => forum.website.com

website.com/gallery/ => gallery.website.com

website.com/downloads/ => downloads.website.com

Is this possible? I see that you created a subforum's mod, so I assumed you'd know whether this is possible, or how to do something like this.

At the moment, the forum folder is e.g. website.com/forum/, and any pages underneath is e.g. website.com/3/pagename/. Is it possible for me to have it as forum.website.com/3/pagename/ ?

No that is not possible ..
What you can make is a redirect via .htaccess (subdom.domain.tld -> domain.tld/path)
Many are stubborn in relation to the path, a few in relation to the target.
